  1. Wash Capsicum properly, cut it into medium-small size pieces.
  2. Wash aloo also properly, peel off its skin & cut it into medium-small size pieces.
  3. Then again wash aloo to remove their starch properly so that they become more crispier after frying.
  4. Grind Tomatoes, Ginger Garlic Paste & Green Chillies finely into purée in a mixer grinder.
  5. Then take a kadhai, add oil in it & keep the gas on medium flame.
  6. When oil gets heated up, add chopped aloo pieces in it & fry them till they are golden brown in colour.
  7. When they turn into golden brown in colour, turn off the flame & take them out in a plate.
  8. Then again take a kadhai, add 1/2 Big Spoon Oil in it & keep the gas on medium flame.
  9. When oil gets heated up, roast chopped capsicum pieces in it till they become soft & take them out in a bowl.
  10. Then add 1/2 Tea Spoon Ajwain, 1 Tea Spoon Jeera in the Same oil & let them sizzle.
  11. When they start sizzling, add finely grinded tomato purée in it with 1 Tea Spoon Salt so that they start releasing oil quickly.
  12. After 5-6 minutes, when oil is completely released, add spices mix in it & roast them for 2-3 minutes.
  13. After 2-3 minutes, add fried & roasted aloo & capsicum pieces in it with some water & mix them properly.
  14. Then add 1/2 Tea Spoon Garam Masala & 1 Tea Spoon Roasted Kasuri Methi & mix them properly.
  15. Your Aloo ShimlaMirch/ Capsicum is ready to be served.
