The ingredients needed to make Rajma Masala:
  1. Take 1 Cup Chitra Rajma/ Kidney Beans
  2. Make ready 3 Medium Size or 6 Small Size Tomatoes

  5. Take 1 Inch Ginger
  6. Take 4-5 Garlic Cloves/ Lassan
  7. Make ready 1 Table Spoon Ginger Garlic Paste
  8. Make ready 2 Table Spoon Desi Ghee
  9. Get 20-30 gms Butter
  10. Take as required Some Dhaniya Leaves
  11. Take 2-3 Cups Water
  12. Prepare 1 Tea Spoon Jeera
  13. Take 1 Pinch Hing
  14. Get Khade Masale/ Dry Spices
  15. Take 1 Tej Patta/ Bay Leaf
  16. Prepare 1 Big Elaichi/ Big Cardamom
  17. Make ready 3-4 Laung/ Cloves
  18. Take 1 Small Daal Chinni
  19. Take Powdered Spices
  20. Make ready 2 Tea Spoon Salt
  21. Prepare 1/4 Tea Spoon Haldi Powder
  22. Take 1 Tea Spoon Dhaniya Powder
  23. Get 1/2 Tea Spoon Amchoor Powder
  24. Make ready 3/4 Tea Spoon Laal Mirch Powder
  25. Make ready 1/2 Tea Spoon Kashmiri Laal Mirch Powder
  26. Take 1 Tea Spoon Garam Masala
  27. Prepare 1/2 Tea Spoon Roasted Jeera Powder
  28. Make ready 1 Tea Spoon Roasted Kasuri Methi
Steps to make Rajma Masala:
  1. Wash Rajma properly, then soak them in water for 6-8 hours or overnight or soak them in Boiling water for 1 Hour.
  2. Chop Onion & Dhaniya Leaves very finely & grind Tomatoes, Green Chillies, Ginger & Garlic finely into purée in a mixer grinder.
  3. After 6-8 hours/ overnight/ 1 Hour, take a pressure cooker, add Soaked Rajma in it with all khade Masale, 1 Teaspoon Salt & 2-3 Cups Water.
  4. Now remember, if level of water will be low in Rajma it’s skin will get tear & Rajma will break, so level of water should be high in pressure cooker.
  5. Then close the lid, give 1 Whistle on high flame after that turn the gas on low flame & give 6-8 whistles/ cook them for 15-20 minutes.
  6. After 6-8 whistles, turn off the gas & let the pressure cooker depressurise naturally.
  7. Meanwhile, take a Kadhai or Pan, add 2 Table Spoon Desi Ghee in it & keep the gas on medium flame.
  8. When ghee gets heated up, add 1 Teaspoon Jeera, 1 Pinch Hing & let them sizzle.
  9. When they start sizzling, add finely chopped onion in it & roast them till they are golden brown in colour.
  10. When they are 60-80% roasted, add some water to make them into a paste.
  11. Then add 1/4 Teaspoon Haldi Powder & roast it for 10 seconds.
  12. Now add finely grinded tomato purée in it with 1 Teaspoon Salt, mix them properly & cook them for 5-6 minutes till they start releasing oil.
  13. After 5-6 minutes, when they start releasing oil, add 1 Teaspoon Dhaniya Powder, 3/4 Teaspoon Laal Mirch Powder, 1/2 Teaspoon Amchoor Powder & cook them for 2-3 minutes.
  14. After 2-3 minutes, add some water to make them into a paste.
  15. When pressure cooker depressurise naturally, open the lid & add masala mixture in it & mix it properly.
  16. Then add 1 Teaspoon Garam Masala, 1/2 Teaspoon Roasted Jeera Powder, 1 Teaspoon Roasted Kasuri Methi, Chopped Dhaniya Leaves & 20-30gms Butter & mix them properly,
  17. Now again close the lid & give 1 whistle on medium flame.
  18. After 1 whistle turn off the flame & let the pressure cooker depressurise naturally.
  19. After some time open the lid & your Rajma Masala are ready to be served.
