- If the sausages are fresh, cook evenly on all sides until done through, usually 5 min on 4 sides on med. Wrap in foil to rest.
- Brown squash in olive oil in skillet on med-hi heat for 5 minutes or so, just until golden brown all over.
- Add chicken broth to squash until it covers the squash halfway. Simmer, covered, on med-Lo until tender, 10-15 minutes.
- Cut the sausage into bite sized pieces on the bias.
- Once the squash is tender, the chicken broth should be mostly gone. (If its not, drain some out.) Add sausage. Serve.
