- Prepare 20 g Ginger (finely chopped)
- Make ready 1 Tbsp Szechuan Peppercorn
- Make ready 8 pc Dried Chillies (halved, soak in warm water)
- Get 100 g Peanuts (finely grounded in a food processor)
- Prepare 3 Tbsp Cooking Oil (for stir frying)
- Get 2 Tbsp Cooking Oil (for sauce)
- Get as needed Spring Onions (sliced thinly, for garnish)

- Marinate the chicken with the marinade mixture for 30 minutes. Ground the peanuts in a food processor or chopper and set aside.
- When ready, add 3 Tbsp of cooking oil in a wok on high heat. Fry the chicken until brown and set aside.
- In the wok, add 2 more Tbsp of cooking oil and fry the garlic, ginger, szechuan peppercorn and dried chillies until fragrant (10 seconds).Then add the sauce mixture, peanuts and mix well. Cook until see the oil separating from the sauce.
- Next add in the chicken and mix well. Serve on a plate and garnish with spring onions.
